Pulp Pancakes

Pulp Pandekager

Warm, fluffy and naturally sweet – these pancakes are made with leftover pulp from homemade plant milk and ripe bananas. Perfect for breakfast, brunch or as a cozy snack.


🛒 Ingredients

  • Pulp from Hazelnut Mylk
  • 2-3 bananas (preferably ones with spots you don't want to eat)
  • 200 g oat flour
  • 300-350 ml Plant Milk
  • 1/2 teaspoon vanilla powder
  • 1/2 teaspoon cardamom
  • 2 teaspoons (with top) baking powder


🥄 Procedure

Use a fork to mash the bananas in a large bowl until they are completely creamy.

Stir the oatmeal, vanilla powder, cardamom and baking powder into the banana puree.

Add the pulp from your hazelnut milk and 300 ml of plant milk (start with that amount and adjust if the dough is too thick). Stir everything together well, the dough should be thick but liquid enough to pour with a spoon.

If you have time, let the dough sit for 10 minutes. This will make them a little fluffier.

Heat a non-stick pan over medium heat. Add a little coconut oil or butter and fry small pancakes. Fry for 2–3 minutes on each side, until golden and firm.

Serve with fresh fruit, a little syrup or a sprinkle of nuts.
